Mary's Spritz Cookies (aka- the best Spritz on the planet) Submitted by Teri DiLibero

2 Cups (1 pound butter)

2 Cups Sugar

2 eggs well beaten

4 cups flour

3-4 teaspoons Real Almond extract

Cream butter and sugar. Add eggs and extract. Beat well. Sift flour and add to cream mixture until smooth. Put in cookie press. Sprinkle with toppings (colored sugars, dragees etc.) and bake at 400 degrees. (watch carefully to see how long they need to bake) Do not overbake. Edges should not be brown.  You can color the dough if desired.

 

Red Velvet Cake

1/2 C shortening
1 1/2 C sugar    
2 eggs
4TBSP cocoa
2TBSP hot coffee    
1tsp red food coloring
1 7/8 C cake flour
1tsp baking soda
1tsp salt
1 C sour milk
1 tsp vanilla
 
Cream shortening, add sugar gradually.  Add well-beaten eggs.  Mix cocoa, coffee and food coloring.  Mix cocoa mixture with shortening mixture.  Sift cake flour, salt and soda together.  Add to creamed mixture alternately with milk.  Stir in vanilla.  Grease and flour 2 9" cake pans, bake at 350 degrees for 40-45 minutes.
 
As shown - frosted with Whipped (store-bought) cream cheese frosting.  Decorate as you please.

 

Mountaintop Mint Cookies

Made with crushed/cut up/broken Andes Creme De Menthe candies:
 
1 C butter/margarine
1/2 C white Sugar
1 C Brown sugar (packed)
2 eggs
1 tsp vanilla
2 1/2 C flour
1 tsp baking soda
1/4 tsp salt
2 C cut-up or crushed candies
 
Mix sugars, butter, eggs, vanilla till light and fluffy.    Mix in flour, baking soda and salt.  Add candies.
Bake 9-12 minutes in a 350 degree oven until lightly browned.
 
Crispy outside, chewy inside, minty and cool!

 

2 Delicata Squash

Cut the squash in half, clean out the seeds, put some butter in each half and sprinkle with salt. Roast in the oven for 45 minutes at 350 degrees or until tender. Serves 4.

1 package of Hidden Valley Orginial Ranch Buttermilk Recipe

1 Cup Sour Cream

1 Cup Buttermilk

Pasta Veggie Alfredo Ala Charles (left)

2 Cups Broccoli Florets
2 Cups Cauliflower Florets
2 Cups baby Carrots
1 Cup chunked Celery
 
Steam Veggies until just tender....
-
Toss Steamed veggies with 3 cups Spiral Egg Noodles (cooked)
Set aside to allow flavors to meld.....(and give yourself time to fix the sauce!)
 
Alfredo Sauce (Charlie style)
 
1 Cup Milk
1 Tablespoon Butter
1 Tablespoon Corn Starch
Salt and Pepper to taste
dash or two of Onion Powder
 
Mix Cornstarch in milk, heat on stove with butter and spices until thickened.
 
Pour sauce over veggies and pasta, toss gently and Enjoy!

 

Rodney's Lunch

2. Order Happy Meal (any variety)

3. Serve.

Christmas Eve Salad

Christmas Eve Salad

1 Lg.  box cherry Jell-O
2 cups boiling water
1 20 oz. can crushed pineapple (drained)
1 can cherry pie filling

Mix Jell-O in hot water.  Add drained pineapple & cherry pie filling.  Let set.
Then add topping.

Topping:

1 8 oz. cream cheese
1 small ctn. sour cream
1/2 cup confectioner's sugar
1 tsp. vanilla
1/2 c. chopped nuts

Combine all ingredients except nuts.  Mix well.  Add to setup Jell-O mixture.
Cover with chopped nuts.  Keep refrigerated.

 

 
6 Cup Salad

6 Cup Salad

1 Cup Mandarin Oranges

1 Cup Marshmallows, small

1 Cup Sour Cream

1 Cup Pineapple, Cubed or Tidbits

1 Cup Flaked Coconut

1 Cup Chopped Pecans (optional)

Mix together and place in the refrigerator.

Philly 7 Layer Mexican Dip

Presentation Suggestion: Don Shepherd D.A.S design. This was a private line (Don Shepherd) made at Blenko but sold under the D.A.S Designs name through Rubel & CO. This line is called  ICEFLOE.

Serving Suggestion: Served on a 19-8 plate. This is a Pre-Designer piece.

 
Philly 7 Layer Mexican Dip

1 pkg (80z) Cream Cheese, softened

1 Tbsp Taco Seasoning Mix

1 Cup each: Guacamole, Salsa, & Shredded Lettuce

1 Cup (4oz) Shredded Sharp Cheddar Cheese

½ Cup Chopped Green Onions

2 Tbsp Sliced Pitted Ripe Olives

Mix Cream Cheese and Seasoning Mix. Spread on bottom of pie plate or Quiche dish. Layer rest of Ingredients over Cream Cheese mixture. Serve with tortilla chips.

Guacamole Recipe

3 Ripe Avocados

McCormick Spicy Great Guacamole mix.
